Hello! Today has been a rather laid-back one where I’ve spent the entire time at home, couched out and doing a bit of baking as well. I figured this would be a good chance to make use of the bran muffin mix I bought on Sunday, while simultaneously satisfying my sweet tooth. I initially planned to stick to the recipe but as I went along, I decided to make a few changes, which turned out really good. I thought I’d share my easy adapt on the blog for those wanting to give it a go on their next bake-off.


1 Bran Muffin Pre-mix | 2 Medium Eggs | Half-a-cup of Milk | 1 Cup of Water | 3 TBL Coconut Oil (Melted Down) For Topping: 1 Handful of Cacao Mix Dried Fruit & Nuts


Before we begin any prep-work, heat up your oven to 180 degrees Celsius, then shut the oven door. As per your pre-mix instructions, sift your dry ingredients (all of which are contained in your pre-mix) in to a large mixing bowl. In a separate bowl, beat together 2 eggs, water, milk, and coconut oil. Once this is done, gently add your wet ingredients to the dry mix – and be careful not to over-mix, just enough to ensure everything is well incorporated. While your mixture is sitting, use a small amount of coconut oil to grease a 12 pan muffin tray. Now, scoop out the mixture evenly in to the tray, then follow with a light sprinkle of your cacao mix evenly in to each pan. Finally, it’s time to put these treats in to the oven, and let them bake for 20 minutes – don’t forget to set a timer!
